可做 10個中型鬆餅
材料:
- 牛油(butter 奶油)80克
- 雞蛋(打散成汁)1隻
- 蘋果汁 2/3杯
- 低筋麵粉 (cake flour) 2杯
- 泡打粉 (baking powder) 1茶匙
- 玉桂粉(cinnamon)1茶匙
- 紅糖(brown sugar)1/4杯
- 白砂糖(white sugar 蘋果如很甜,可酌量減糖)2湯匙
- 紅蘋果 1大個
- 杏仁幼粒(almond meal 如喜歡可用粗粒杏仁,或不加) 2湯匙
做法:
- 焗爐預熱至180C (356F).
- 用微波爐或用小鍋隔著熱水融化牛油,待放涼點。
- 把蘋果汁和蛋汁拌勻,拌入融化牛油,待用。
- 低筋麵粉過篩,拌入泡打粉和玉桂粉。加糖完全混合。
- 蘋果去皮,把蘋果磨成粗蓉。加入麵粉混合物中。此步要快手,因蘋果去皮後,很快變黑色。
- 把蛋汁混合物(濕材料)倒進麵粉混合物(乾材料)中,用大匙或膠刮 spatula 把所有材料輕輕拌勻,完全不需用電動搞拌器,混合就可以了。切勿過度搞拌,否則令鬆餅不夠鬆軟。
- 用匙羹把粉漿,分別放在鬆餅焗模中。放入焗爐焗約 20至 25分鐘,或直至轉金黃色。(時間視乎焗爐的火力而定。)要鬆餅焗得夠鬆軟,參考之前寫過的焗鬆餅秘技所在。

是真正的蘋果汁啊!跟基絲汀平時飲用清澈見底的蘋果汁很不一樣。是啊,這是從Aldi 買回來,很像鮮榨的蘋果汁的味道,很有蘋果香味。自第一次嘗試後,就變成女兒的指定飲品~哈!

回覆刪除Simply use a grater with large holes, like this one that I used to grate potatoes to crush apple. Very easy.
低筋麵粉 is low gluten flour in English. Buy "cake flour" at any supermarkets and it would do.
如果只用膠刮,不用電動搞拌器拌勻麵粉混合物,那些麵粉會否mix得不夠even (即係粉漿入面有d一粒粒的小粉團)。

回覆刪除因為我們想鬆餅夠鬆,所以不用電動搞拌器,因為麵粉被電動搞拌器搞過,容易生筋。
麵粉篩過後,用匙羹或膠刮都可以mix得夠even的
做了很多次,都沒有小粉團。只要你不是用 stir的方法,而是用上下翻轉麵粉的手法,就可以了。
1 湯匙泡打粉 .. 好像很多噢~~

我回頭再看看,是沒錯呢。用1湯匙,即3茶匙泡打粉。因為今次用2量杯麵粉,頗多粉呢。
你平時只用 2g-3g 左右,是配合多少克(杯)麵粉呢?看看比例是否差不多?
你那里有的买低筋麵粉吗?我是马来西亚人。

I made this muffin according to the recipe, but the muffin is very "blunt" not sweet enough.....=(

Hi Christine, I found out using 1 cup of all purpose flour is not enough for this receipe, the final mixture is very watery and 1 teaspoon of baking powder seems a lot for 1 cup of flour. Please advise. Thanks, Fiona

回覆刪除Sure, it's ok if you don't add the cinnamon. It won't change the taste of texture at all.
My daughter just loves the smell of cinnamon. If I forgot to add some when I cooked desserts with apples, she would feel the dessert was not perfect, haha...
