自製新鮮意大利粉 【滿足又美味】 Homemade Fresh Pasta

日前基絲汀偶然大有斬獲,以特平價錢買了一部自製意大利粉(義大利麵)的機器(看下圖啦)。開心耶!那部意大利粉機雖然價錢平,但品質也不錯,操作容易。自製的意大利粉當然新鮮,好吃很多。從超市買回來乾製的不能相比。基絲汀製作的意大利粉,是加了兩隻大雞蛋,非常清香。如果雞蛋不夠大隻的話,可以加多一隻半隻,做出真真正正的蛋麵。或者加一些其他香料也可以。自家做新鮮意大利粉方法很簡單容易的。如果沒有那部機,要用擀麵杖(rolling pin)壓平,然後裁剪,功夫就多了。不如去超市買也罷~

粗粒小麥粉(Semolina),顏色微黃。是一種從杜倫小麥(durum wheat)磨製的麵粉,棵粒粗,含蛋白質量極高。常用來製造意大利的材料。基絲汀在搓意大利粉的麵團時加了些,令麵團容易延展之外,更令意大利粉散發麥香。

材料:
  • 麵粉(plain flour)200克
  • 雞蛋(打散成汁) 2隻
  • 鹽 1/4茶匙
  • 粗粒小麥粉(semolina flour)2湯匙

做法:
  1. 先把麵粉和鹽放入食物搞拌器拌勻,然後倒進蛋汁,搞拌至混合成團。
  2. 把麵團放在乾淨台上面,灑下粗粒小麥粉。用手揉至麵團光滑。不用很長時間的。把麵團分成2等份。用保鮮膜包裹。放入雪櫃(fridge)中,約30分鐘。麵團會變得更軟身。
  3. 用意大利粉機,根據說明書指示,把麵團壓成自己喜歡的厚度,並剪出自己喜歡的寬度的麵條。用手輕輕分開麵條,放在灑了麵粉的大盤上。備用。
  4. 在深鍋中,煮滾水(開水),放少許鹽。再滾後,把意大利粉煮至剛剛熟,大約3至5分鐘,視乎麵條厚度而定。切勿煮過度。新鮮的意大利粉很快熟的。即成。

溫馨提示:
  • 搓意大利麵團時,會感到有點吃力,因為它比較硬。不過好處是,這麵團不用搓很久,只要把所有材料拌勻就可以。
  • 冷藏後的麵團變軟些,比較容易壓平。
  • 自製新鮮的意大利麵條不用煮太久,相對超市賣乾製的,時間要短很多。若煮過度就不好吃了。
  • 粗粒小麥粉(semolina flour)可幫助意大利粉容易搓捏和乾身。如不用的話,可於搓成團後,灑少許普通麵粉防黏。但效果一定比沒用粗粒小麥粉好的~

  5. I've received a pasta machine as a gift from the Good Guys and just searching for homemade pasta receipt!! I'll definitely try yours next week. Thanks for your receipt. I tried a few b4: 湯種麵包/茄汁炆牛腩 etc. They are really great.

    我系加拿大都買左同一部意粉機
    但系我通常用黎整中式切面
    而且整好既面可以用三文治袋裝好然後放冰格
    咁樣幾時想食都可以煮新鮮既面黎食
    比買個d乾面好食好多

That was a promotion from the Good Guys here in Perth about a month ago: just buy anything which was on that particular catalogue then they will post the Jamie Oliver brand pasta machine to us! Are you in Eastern state? Do you have the Good Guys there? Which is sort of an electrical store.

    Just check their site again. It's Jamie Oliver pasta kit, not pasta machine, for first 500 customers made purchases between 26 to 28 Oct.

  13. I've tried this yesterday!!
    I think my dough hasn't been knead enough at the beginning, since it was too soft.
    However for the second half, I let my boy to play with that for awhile, and it went thr the pasta machine much better. So I'll knead it more next time.
    But all of them are still very nice, chewy, fresh and smooth! Wonderful receipt except...too much cleaning up afterward...you know, both of my boys was HELPING me yesterday! :-D

    我這部的說明書上清楚規定不能用水洗,可以用掃把麵粉清理。

    說明書嚴禁用水洗。
    我只用清潔的布抹潔。至於裏面接觸麵團的部份是很難接觸到的。用一塊不要的麵團捲幾次,然後丟掉。盼望藉著麵團把捲壓部份的雜質黏去。這是我的想法給你參考。你可以用其他方法。

    每次用完後,都是用掃掃走麵粉。
    相信說明書說不可用水洗,是因為會對機件不好吧。
