三文魚刺身當然是上等選擇。但有時未必有適合做刺身的三文魚。或是有特價,大批買回來,很難一次過吃光。這個三文魚餅食譜就可上場。有營養,又好吃呢。

煎三文魚餅 Salmon Cakes


材料:
  • 三文魚 200克
  • 馬鈴薯 100克
  • 豬肉碎 65克
  • 洋蔥(切幼粒) 60克
  • 牛油(奶油 butter)酌量
  • 蛋汁 少許
  • 鹽 少許
  • 胡椒粉 少許
  • 菜油 少許

做法:
  1. 先把三文魚挑去骨頭和去皮。切粗塊,放入食物搞拌器搞爛,備用。
  2. 把馬鈴薯去皮切粗粒,放入滾水(開水)中,煮約20分鐘。用尖刀可輕易插入,即熟透。撈起瀝乾水份。壓爛成蓉。放涼備用。
  3. 燒熱易潔鑊,下少許牛油煮融,用中火把洋蔥炒至微黃。最好洋蔥還有點脆身。放涼待用。
  4. 用一大盤,加三文魚,豬肉碎,馬鈴薯,洋蔥,蛋汁拌勻。灑酌量鹽和胡椒粉調味。
  5. 用手把上項混合物分開搓成8至10個小球,壓扁成圓餅形。
  6. 燒熱油鑊,把三文魚餅兩面煎至金黃色。即成。可配搭酸甜青瓜或淋些喜歡的醬汁吃。趁熱享受。

    You can try:If the potato isn't cooked beforehand, it won't be broken into pieces easily. But take more time of pan frying.

    i am erica here, i love your blog very much. u r really smart in cooking great meals, all look very yummy. do you have any recipe that without using eggs and milk? my son is allergy to those ingrediants, he love to eat but pity him, he cant take all those yummy food.. so can you provide any great idea/recipe for me? i never cook last time, but now i need to learn for him (he is 2 yrs old ++)

    Thanks for your love of my blog.
    For many recipes, you just omit the eggs and/or milk, you still can cook good food for your son. Take this recipe for an example, don't add any egg, the fish cake is still delicious.

    當然首選是生食啦。我最愛啊!
    但有時在超市買一些已經切開的三文魚,不知道他們之前如何處理,又不知道放了多少天,只知道『有效日期』,所以為了安全,都是煮熟食比較好些。
