煮法跟炆牛腩相差不遠。但最重要是那湯底。湯底靚,就一定好味。用牛腩煲成湯底,很清香鮮味的。這道清湯牛腩最好配搭米粉,加幾條青菜,就是一道完美好吃的輕便餐喔。
先來把牛腩汆水,去除血水,湯底就會清澈。再來用薑片和蒜頭爆香牛腩。加入所有香料,燜至牛腩軟身,就可以用來放米粉了。

清湯牛腩食譜

材料:
- 牛腩 820克
- 薑片 4至5片
- 蒜頭(拍扁)4至 5粒
- 白米酒 1湯匙
- 低鹽雞湯(自製或現成) 3量杯
- 水 1量杯
- 八角 1粒
- 香葉(bay leaf) 3片
- 白胡椒粒 約 20粒
- 冰糖(如大拇指大小) 10克
- 白蘿蔔(去皮切粗塊) 500克
- 鹽 酌量
做法:
- 牛腩用滾水略煮,去血水。撈起瀝乾。切粗塊。如有肥膏,也切丟。備用。
- 燒熱油鑊,下薑片和蒜頭,用大火爆香。下牛腩炒熱。灑酒,炒勻。倒進雞湯和水。加八角,香葉,白胡椒粒和冰糖。
- 加蓋煮滾後,煮約 30分鐘,熄火,不拿走蓋,焗 15分鐘。如是者,重複此步驟至牛腩開始軟稔。
- 另起油鑊爆香白蘿蔔。加入牛腩中,煮至蘿蔔軟稔。加少許鹽調味,即成。
溫馨提示:
- 燜煮牛腩需時,利用熄火焗的方法,是利用餘溫燜煮,節省能源(可參考這柱侯牛腩的煮法)。今次因時間關係,我用高壓煲,只需25分鐘。
- 加少許冰糖,不但令牛腩味道清甜,也幫助燜煮牛腩快些軟稔。
- 雞湯的味道清甜,顏色較淺而清澈。也可改用牛肉湯底的。
如果用高壓鍋 是牛楠的部分煮25分鐘嗎 可以連白蘿蔔一起丟下去嗎?如果分開是個要多久呢?

刪除白蘿蔔比牛腩容易和快煮稔。我通常煮牛腩25分鐘後,才加白蘿蔔,煮約 10分鐘。但高壓煲打開蓋前要放氣,比較麻煩一點。如果你不嫌白蘿蔔太稔的話,就一起放進去吧。

刪除Beef brisket is a cut from the breast or lower chest of beef. I couldn't find any from Coles, IGA or Woolies either. So I went to a chinese butcher. Some Aussie or Vietnamese butchers might have this cut. The Aussie butcher I went before calls it "beef fingers". Wonder if you have any local Aussie or Vietnamese butchers nearby?

可以的。
刪除做法只要把牛腩放入真空煲內,煮大滾10分鐘。放回煲殼中。可隔2小時,拿出來煮一兩次,就很快稔了。

刪除If using slow cooker, the radish will need around 1 hour cooking time to be softened. So add it an hour before you finish cooking the beef.
Caster sugar is not good for making this dish. If you don't have any rock sugar, I suggest you skip it.

回覆刪除Follow this recipe to prepare all the ingredients. Then put all the ingredients in your instant pot. High pressure cooking for 30 to 35 minutes. If you want your radish chunks to have more crunchy texture, you need to cook them separately.
