澳洲天氣持續寒冷,要燜煮一鍋增添廚房熱能,也給家人暖暖身。來到澳洲,嘗試過牛頰肉(beef cheek),很是喜歡。如果大家找不到,也可用牛腩,牛尾,或其他價錢便宜的牛肉部分,例如 chuck steak. 用來煮這道菜,也很適合。是慢火出細貨,牛頰肉稔到不得了,加了紅酒,燜出的汁,真是精華。吃了幾口,很是暖身呢。

- 牛頰肉(beef cheek) 640 克
- 鹽 酌量
- 鮮磨胡椒粉 少許
- 中筋粉(plain flour)1½ 湯匙
- 油 2 湯匙
- 蒜頭(拍扁) 3粒
- 洋蔥(切半或四份) 2個
- 紅蘿蔔(切粗塊) 1至 2條
- 西芹(切粗塊)1 條
- 番茄醬(tomato paste) 2湯匙
- 紅酒 ¾ 量杯
- 牛肉湯(或雞湯)2量杯
- 百里香(thyme)2 至 3條
- 香葉(bay leaf)1 片
做法:
- 牛頰肉切成 4cm (1½ 吋) 大小的粗塊。灑上鹽和胡椒粉調味。中筋粉和牛頰肉放入一食物袋中搖勻。
- 用中火燒熱厚底深鍋,下少許油。搖去牛頰肉上面的多餘麵粉。下鍋,不要彼此重疊,煎至兩面微黃色。盛起蓋著保溫。
- 原鍋中再下少許油,爆香蒜頭,下洋蔥,紅蘿蔔和西芹,炒勻,煮約 3分鐘,直至聞到香味。加番茄醬,倒進紅酒,炒勻。煮滾後,繼續煮到收乾至一半。牛頰肉回鍋,倒進牛肉湯,加百里香和香葉。加蓋煮滾後,轉中小火,燜 約3小時。期間拌勻,以免黏底。牛頰肉煮稔後,試味。有需要的話,再加鹽和胡椒粉調味,即成。趁熱享用。
溫馨提示:
- 牛頰肉,超市有售。若找不到,可改用其他價錢便宜的牛肉部分,例如 chuck steak.
- 如果鍋子不夠大,可分批煎牛頰肉。
- 紅酒,今次基絲汀用 Shiraz. 買便宜的,自己喜歡的味道就可以。
請問第3步中,牛頰肉是跟番茄醬、紅酒一起回鍋嗎 ?

回覆刪除Recipes like these sounds like a perfect candidate for using a pressure cooker. I am actually thinking about getting one but am still not entirely convinced. Do you have an opinion on this? I love making 炆牛尾 or 中式牛腩 etc, have been mostly following your recipes slow cooking on stove top.
PS hope you enjoyed masterchef finale last night. I skipped a few years but have been following again this year. The challenge was hectic!

刪除Sure, a pressure cooker is good for making this dish and cut short the cooking time at least by two-thirds. All slow-cooked dished like this one, 炆牛尾 or 中式牛腩 can be cooked in a pressure cooker.
