今次用兩種菇煮個汁,鮮美好味。用來蘸魚肉吃,很是配搭。可以下一大碗白飯。加一碟水煮青菜,很健康的一餐啊。
雙菇蠔汁鮫魚食譜

材料:
- 鮫魚扒(mackerel fillet)280克
- 薑(切絲) 3 片
- 冬菇(泡水浸軟) 3隻
- 蠔菇(oyster mushroom)2大片(80克)
- 蔥(切粒) 1條
- 生抽(醬油)½ 茶匙
- 糖 ⅛ 茶匙
- 粟粉(玉米粉)¼ 茶匙
- 油 ½ 茶匙
- 生抽 2茶匙
- 老抽 ½ 茶匙
- 水(或浸冬菇的水)120毫升
- 糖 ½ 茶匙
- 蠔油 2茶匙
- 麻油 少許
- 粟粉 1茶匙
- 水 2茶匙
做法:
- 把冬菇切絲,用醃料拌勻。放入鑊中,用大中火隔水蒸 20分鐘。
- 鮫魚沖水洗淨,抹乾水分。用少許鹽和胡椒粉調味。兩面撲上薄薄的粟粉。用中大火把鮫魚兩面煎至金黃色,並熟透。盛起蓋著保溫,備用。
- 在原鑊加少許油。用中火爆香薑絲,下冬菇和蠔菇,炒勻。倒進汁料,煮 3分鐘。埋獻,灑下蔥粒,即成。淋在煎好的鮫魚上面,趁熱享用。佐飯一流。

- 也可改用其他魚扒。
- 冬菇醃後先蒸,質感軟滑又好味,跟汁一起煮,很快捷方便呢。

Hi Christine, thanks for the recipes, just arrived Gold Coast from Sydney for couple of months, however, I couldn’t find the oyster mushroom. May I know any other mushroom to substitute with?

回覆刪除You can find some groceries have oyster mushroom for sale. If you can't find any, simply replace with any mushrooms you can get, like shiitake, or swiss mushrooms.
